THE ALFRESCO DESSERT

summer tart
Forget cucumber sandwiches, this
summer berry tart has got alfresco
afternoon tea written all over it. You
can even use the exact same recipe
to make individual cakes.
Preparation time 90 minutes
Cooking time 65 minutes
Ingredients (serves 8) X 250g butter
X 250g sugar X 250g ground blanched
whole almonds X Juice and grated zest
of one lemon X 3 eggs X 350g fresh
berries X Toasted flaked almonds and
crème fraîche to serve For the pastry:
X 175g plain flour X 110g unsalted
butter, cut into cubes X 2 egg yolks
X 50g caster sugar X Salt
Method Step 1: To make the pastry,
sift the flour and rub in the butter until
the mix resembles bread crumbs. Add
the yolks, sugar and salt and mix into a
ball. Wrap in cling film and chill for 1hr.
Step 2: Preheat the oven to 180�C/gas
mark 4 and heat a baking tray until hot.
Step 3: Line the base of a loosebottomed
30cm tart tin with baking
parchment. Roll out the pastry 3-4mm
thick and line the tin. Prick the bottom
of the pastry case with a fork, cover with
a round of greaseproof paper and weigh

down with baking beans. Place the tin
on the hot baking tray and bake for 15
minutes. Remove the baking beans and
paper and allow to cool for 5 minutes.
Step 4: Lower the oven to 150�C/gas
mark 2 and reheat the baking sheet.
Step 5: Using a food processor, cream
the butter and sugar until pale. Mix
in the ground almonds, lemon juice and
zest, then add the eggs one by one.

Step 6: Scatter 250g of the berries into
the pastry, then spoon in the almond
mixture. Place on the hot baking sheet
and bake for 40-50 minutes, until golden
brown. Scatter with the flaked almonds
and serve warm with crème fraîche
and the remaining berries.
