Chef of the moment Gizzi Erskine’s
new book is packed full of inspiration.
With peppery cress, radishes, ginger
and wasabi dressing, this beef
spicy salad is a must for flavour
fans. And for an even healthier

steak with tuna.
Preparation time 10 minutes
(plus 1 hr cooling time)
Cooking time 2 minutes
Ingredients (serves 4) X 1 tbsp olive
oil X 2 fillet steaks X Seasoning X 3cm
root ginger, peeled and grated X 2 tbsp
Kikkoman soy sauce X 2 tbsp rice wine
vinegar X 1 tsp wasabi paste X 1 bunch
watercress, trimmed X 8 cherry
tomatoes X 8 white radishes, peeled
and sliced X 8 red radishes, quartered
X 2 spring onions, sliced X Black and
white sesame seeds X 4 chives
Method Step 1: Heat the oil in a pan
until very hot. Season the steaks and
sear for 20 seconds each side. Leave
to rest for 1 hr in the freezer (since it’s
been seared, the steak won’t need to
cool first). This makes it easier to slice.
Step 2: Mix the ginger, soy sauce,
rice wine vinegar and wasabi paste.
